Cheesy Chicken and Broccoli Pasta

What you need:

  • 2 boneless and skinless chicken breasts, sliced into bite-sized strips
  • 1 head broccoli, cut into florets
  • 3 cups fusilli pasta
  • 1 can chicken broth
  • 3 cloves garlic, minced
  • 2 cups half-and-half
  • 1 tablespoon olive oil
  • 4 dashes Italian seasoning
  • Freshly grated parmesan cheese to taste
  • Salt and pepper to taste
  • Red pepper flakes to taste (optional)

Saute chicken on olive oil over medium high heat in a large pot for 3-4 minutes. Add the pasta, broth, garlic and half-and-half to the pot. Increase heat and bring mixture to a boil, reducing heat once boiling. Simmer for 10 minutes, stirring occasionally.

Reduce heat to medium-low before adding broccoli. Simmer, covered, for 5 minutes. Add salt and pepper (and red pepper flakes if using). Stir and remove from heat. Transfer to a serving dish and serve topped with parmesan cheese.

Ultimate Meatball Subs

What you need:

  • 6 hotdog buns
  • 1 package Rosina Italian Style meatballs
  • 1 can crushed tomatoes
  • 3/4 cup shredded mozzarella cheese
  • 2 garlic cloves, pressed
  • 1 tablespoon + 1 teaspoon olive oil
  • 2 teaspoons dried oregano
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 small pinch red pepper flakes

Heat olive oil in a saucepan over medium heat and cook garlic, oregano and red pepper flakes for 1 minute. Add tomatoes, sugar and salt and stir until ingredients are well-combined. Add the meatballs and stir, covering with sauce. Cover and cook for 20-25 minutes, stirring occasionally.

Remove from heat and spoon meatballs and sauce into hotdog buns (divide into 6 buns). Top each with mozzarella cheese and cook on a pre-heated broiler for 2 minutes (check frequently to make sure they don’t burn!). Allow to cool for several minutes before serving.
